ingredients
- 1 x 4oz/113g fresh or frozen boneless, skinless cod steak
- 1oz/28g half fat grated cheese
- 1 small onion, chopped
- 1 fresh tomato chopped
- Salt and pepper to season

method
- Pre-heat oven to 190°C/375°F/gas mark 5. Season the cod steak well with salt and pepper
- Place cod in a shallow, ovenproof dish. Sprinkle with grated cheese, chopped onion and tomato.
- Place in the oven for approximatley 30-45 minutes. A little longer if the fish is frozen. Alternatively microwave on high for 5 minutes.
- Serve with salad or vegetables. You can also add other ingredients as desired e.g mushrooms, peppers, chopped spring onions etc.
